SALSA

Me and the teller at my bank were discussing how our tomatoes were doing today. She said she was planning to use many of hers to make salsa. I said I love salsa what a great idea, especially since salsa is 5-8 bucks for a little container. I asked her if she had a good recipe and she said no! So this is not going to be my ordinary tie God into the topic blog. This blog is about one thing. Who's got the best homemade salsa recipe. So if you have a great recipe please post it and if it's from a restaurant you used to work at list its name too. Oh, and by the way He is the God of salsa too!

My co-workers really seem to like my salsa, but it's quite strongly flavored and not in any way traditional, and some people might find it way too tart or spicy. It's not so much a fixed recipe as whatever I feel like putting in at the time:

4 tomatoes, peeled, seeded and diced

4 tomatilloes, husked and diced

1 red onion, diced

1 small can tomato sauce

2 limes, juice and zest

4 cloves garlic, minced or crushed

1 bell pepper, roasted, peeled and diced

1 jalapeņo pepper, roasted, peeled and minced

2 T. chili powder

1 handful fresh cilantro leaves, chopped fine

2 t. dried oregano

salt to taste

Combine all ingredients and allow flavors to mingle overnight in refrigerator.

When I get in the mood, I might snip up some dried peppers or replace the jalapeņo with a chipotle.

I haven't made this in a while, and now you have me wanting to make it.
