Another green tomato cake recipe from Jere
Start with a cake mix, white or yellow, with the pudding added to it.
3 eggs
1/3 cup of oil
1/2 cup water
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/4 teaspoon cloves
1 cup chopped pecans or walnuts
1/2 cup chopped raisins
1/2 cup chopped dry cranberries
3 cups diced green tomatoes
Preheat oven to 350*. In mixing bowl place spices, nuts, cranberries and raisins after chopping in food processor. Add cake mix, eggs, oil. Chop 3 cups of green tomatoes in processor and pour into bowl. The green tomatoes add a lot of moisture but you will need to add 1/2 cup water and mix on med speed until all is moist and well blended.
Pour into prepared pans, I spray mine with cooking oil. It will make three loaf pans or one bundt pan, 9 x 13 pan or two 9 inch cake pans.
Bake loafs for 1 hour, bundt for 1 hour 15 minutes, 9 x 13 for 1 hour, 9 inch round cake pans 50 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
Cake doesn't need icing but if you like, add what ever you think would be good.
Try it you will like it. This is the easy way to bake.
