Tennessee's Department of Health is responsible for regulation of food service establishments and the law requires that restaurants have an unannounced inspection at least once every six months to determine if they are in compliance.
According to the health department's Web site, in addition to routine inspections, unannounced inspections are also conducted in response to individual complaints.
The state uses a 44-item inspection sheet with a maximum of 100 points; 13 of the items are considered critical. Those critical items must be corrected within 10 days and follow-up inspections are conducted to determine compliance.
If a business fails to correct the violations or has an imminent health hazard, it could result in the closure of the establishment until corrections are made. Also, serious or repeated violations may result in revocation of the business's permit.
Bedford County school cafeterias got high scores across the board, as did many of the 105 eating establishments in Shelbyville and others in smaller communities like Wartrace and Bell Buckle.
However, four Bedford County establishments scored below an "80" - Whitt's Barbecue, The Dinner Table, El Mexico and Midway Diner.
Whitt's was inspected on Dec. 17 and received a score of 75. Inspectors cited the establishment for not having toxic items properly stored, labeled, used and due to problems with the plumbing in the building, as well as other violations.
El Mexico was inspected on Dec. 28 and was found to have potentially hazardous food not meeting temperature requirements during storage, preparation, and display and also was cited for not having toxic items properly stored. Inspectors also stated that potentially hazardous food was not properly thawed.
Midway Diner in Deason also received a score of 78 when inspected on Dec. 15. They were cited for potentially hazardous food not meeting temperature requirements, and a lack of "clean, good hygienic practices."
The Dinner Table received a score of 79 when they were inspected on Dec. 23, with officials pointing out problems with their water source, potentially hazardous food not properly thawed and for issues with food protection during storage and preparation.
The Department of Health states that an individual restaurant inspection score is a "snapshot" of the condition of the business at the time of inspection and that a single score "is not necessarily indicative of the inspection history of the facility."
"The scores are used as a tool by the State and industry to place a value on compliance to the regulations, educate the operators, and thereby encourage corrective action," the department says.
