FCEs present year's delights

The Bedford County FCE held its Taste and Tell Luncheon at the University of Tennessee Extension Office on Midland Road.

The Bedford County FCE club representatives gathered for their annual Taste and Tell luncheon earlier this month. The luncheon, always a bit, which showcases dishes from some of the best cooks around, took place as the UT Extension Office on Midland Road. Here's a sample of just one of the many delicious recipes cooked up for the luncheon:

Autumn apple salad (Marie Spence)

1 (3 oz.) box lemon Jell-O

1 (18 oz.) crushed pineapple with juice

1/4 cup sugar

1 (8 oz.) pkg. cream cheese

1 cup Cool Whip

1 cup finely chopped red apple, unpeeled

1 cup chopped celery

1/2 cup chopped nuts

Mix sugar and pineapple to saucepan; bring to a boil and boil 3 minutes. Remove from heat, stir in Jell-O, mix thoroughly. Let cool, then add softened cream cheese and mix well. Add apples, celery, nuts. Fold in Cool Whip. Place in refrigerator (covered) until well chilled. Great served on lettuce leaf for the perfect autumn treat.
