Hopefully, most everyone is well aware that their dinner plate should be well proportioned with green vegetables, especially during cold and flu season. We still admit there are evenings when we wreck our brains as to what to serve with those winter vitamins.
Here are a few menu suggestions to make your winter plates pop with flavor and good health. In the time you'll save preparing these dishes, you might even have time to bake the Lemon Snowballs we've added as a bonus for all your hard work!

**20 Minute Lemon Broccoli Chicken
4 servings
1 lemon
1 Tbsp. vegetable oil
4 skinless chicken breast halves
1 (10 ? oz.) can cream of broccoli soup
? C. milk
1/8 tsp. black pepper
Chopped fresh thyme for garnish
Cooked fresh or frozen broccoli
Cut 4 thin lemon slices. Squeeze 2 teaspoons juice from remaining lemon. Set aside. In skillet of hot oil, cook chicken 10 minutes or until browned. Remove. Set aside. Spoon off fat.
In skillet, combine soup, milk, reserved lemon juice, and pepper. Heat to boiling. Return chicken to skillet and top with lemon slices.
Cover and cook over low heat 5 minutes or until chicken is no longer pink, stirring often. Garnish with fresh thyme. Serve with broccoli.
**Tofu Tuna Burgers
5 oz. regular tofu, chopped
1 (6 ? oz.) can tuna
2 Tbsp. cornstarch
2 Tbsp. Parmesan cheese
2 green onions, chopped
Black pepper to taste
1 Tbsp. vegetable oil or cooking spray
Serve with sauteed fresh zucchini and mushrooms
Garnish with fresh cilantro or mint (optional)
Mix and form into four patties (mixture is crumbly, but firms while cooking.) Fry in lightly oiled or sprayed skillet 4 to 6 minutes. Serves 2 to 4.
Sautee sliced, fresh zucchini and Porta Bella mushrooms in drizzle of olive oil until tender. Serve as side.
**Lemony Snowballs
Mix thoroughly:
? C. shortening
2/3 C. sugar
2 Tbsp. grated lemon rind
Stir in:
3 Tbsp. lemon juice
1 Tbsp. water
1 ? C. all-purpose flour
Sift together and stir in:
? tsp. soda
? tsp. salt
? tsp. cream of tartar
Stir in ? cup of chopped pecans. Form dough into balls the size of a walnut. Place about 1 inch apart on ungreased cookie sheet. Bake at 10-15 minutes at 350 degrees (light brown on bottom.) Remove immediately from cookie sheet and roll in confectioners sugar. Makes about 4 dozen cookies.
